My favorite was Tracy Ann Warren’s Seduced by His Touch, loved the red in the cover! It really stands out!
My favorite series of book covers were the mid-1990s reissues of Julie Garwood books. I think they included Castles, Guardian Angel, The Prize, and maybe The Gift.
